Ingredients
- •1 scoop (about 30g) vanilla or unflavored whey or plant protein powder
- •1 cup old-fashioned oats, blended into flour
- •1 ripe banana, mashed
- •2 eggs (or 1/2 cup egg whites)
- •1/2 cup milk of choice
- •1 tsp baking powder
- •1/2 tsp cinnamon
Instructions
- 1.Blend the oats in a blender or food processor until they reach a fine, flour-like texture.
- 2.In a bowl, whisk the mashed banana, eggs, and milk together until smooth.
- 3.Add the oat flour, protein powder, baking powder, and cinnamon. Stir until just combined — a few lumps are fine.
- 4.Heat a lightly oiled non-stick pan or griddle over medium-low heat.
- 5.Pour 1/4 cup of batter per pancake and cook 2-3 minutes per side, until bubbles form and the edges look set.
- 6.Flip and cook another 1-2 minutes until golden. Serve with fruit or a light drizzle of syrup.
Tip
Protein powder can make batter dry out fast in the pan — keep the heat medium-low so the pancakes cook through before the outside burns.
