Protein Mug Cake

A single-serving cake that's done in under two minutes in the microwave — the fastest way to make a protein powder tub feel like dessert.

Ingredients

  • 1 scoop (about 30g) chocolate or vanilla protein powder
  • 2 tbsp almond flour or oat flour
  • 1/2 tsp baking powder
  • 1 egg (or 3 tbsp egg whites)
  • 3 tbsp milk of choice
  • 1 tsp cocoa powder (optional, for chocolate version)
  • A few chocolate chips (optional)

Instructions

  1. 1.In a large microwave-safe mug, whisk together the protein powder, flour, baking powder, and cocoa powder if using.
  2. 2.Add the egg and milk, and stir until the batter is smooth with no dry clumps.
  3. 3.Fold in chocolate chips if using.
  4. 4.Microwave on high for 60-90 seconds, checking at 60 — it's done when the center springs back and isn't wet.
  5. 5.Let it cool for a minute before eating straight out of the mug.

Tip

Don't overcook it. Protein powder firms up fast in the microwave, and an extra 30 seconds is the difference between a soft cake and a rubbery one.
