Protein Mug Cake
A single-serving cake that's done in under two minutes in the microwave — the fastest way to make a protein powder tub feel like dessert.

Ingredients
- •1 scoop (about 30g) chocolate or vanilla protein powder
- •2 tbsp almond flour or oat flour
- •1/2 tsp baking powder
- •1 egg (or 3 tbsp egg whites)
- •3 tbsp milk of choice
- •1 tsp cocoa powder (optional, for chocolate version)
- •A few chocolate chips (optional)
Instructions
- 1.In a large microwave-safe mug, whisk together the protein powder, flour, baking powder, and cocoa powder if using.
- 2.Add the egg and milk, and stir until the batter is smooth with no dry clumps.
- 3.Fold in chocolate chips if using.
- 4.Microwave on high for 60-90 seconds, checking at 60 — it's done when the center springs back and isn't wet.
- 5.Let it cool for a minute before eating straight out of the mug.
Tip
Don't overcook it. Protein powder firms up fast in the microwave, and an extra 30 seconds is the difference between a soft cake and a rubbery one.
