Ingredients
- •2 protein bars, chopped or crumbled
- •1 cup old-fashioned oats
- •1/3 cup peanut butter or almond butter
- •2-3 tbsp honey or maple syrup
- •2 tbsp mini chocolate chips (optional)
Instructions
- 1.In a food processor, pulse the crumbled protein bars and oats together until coarsely ground.
- 2.Add the peanut butter and honey, and pulse again until the mixture holds together when pressed.
- 3.Transfer to a bowl and fold in chocolate chips by hand if using.
- 4.Roll into 12 balls, about 1 tablespoon each.
- 5.Refrigerate for at least 30 minutes to firm up before eating.
Tip
If the mixture is too dry to hold together, add honey a teaspoon at a time rather than all at once — protein bars vary in moisture, so the amount you need changes depending on which bar you use.
