Ingredients
- •8 sandwich cookies, crushed
- •2 tbsp melted butter
- •8 oz cream cheese, softened
- •1 scoop (about 30g) cookies and cream protein powder
- •1/4 cup Greek yogurt
- •2 tbsp honey or sugar-free sweetener
Instructions
- 1.Mix the crushed cookies with the melted butter, then press into the bottom of 4 small cups or jars to form a crust.
- 2.In a bowl, beat the softened cream cheese until smooth.
- 3.Add the protein powder, Greek yogurt, and honey, and beat again until fully combined and creamy.
- 4.Spoon or pipe the filling over the crusts in each cup.
- 5.Refrigerate for at least 2 hours before eating, until set and chilled through.
Tip
Make sure the cream cheese is fully softened to room temperature before mixing — cold cream cheese is what causes lumpy filling no matter how long you beat it.
