Ingredients
- •1 cup almond flour or oat flour
- •1 scoop (about 30g) chocolate protein powder
- •1/2 tsp baking soda
- •Pinch of salt
- •1/3 cup melted butter or coconut oil
- •1/3 cup brown sugar or coconut sugar
- •1 egg
- •1 tsp vanilla extract
- •1/3 cup chocolate chips
Instructions
- 1.Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- 2.Whisk the flour, protein powder, baking soda, and salt together in a bowl.
- 3.In a separate bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
- 4.Combine the wet and dry ingredients, stirring until just mixed, then fold in the chocolate chips.
- 5.Spread into the prepared pan and bake for 22-25 minutes, until the edges are golden and the center is just set.
- 6.Let cool completely in the pan before cutting into 9 squares.
Tip
Pull these from the oven when the center still looks slightly underdone — they firm up a lot as they cool, and baking until they look fully done in the oven usually means dry blondies once cooled.
