Ingredients

  • 1 cup almond flour or oat flour
  • 1 scoop (about 30g) chocolate protein powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/3 cup melted butter or coconut oil
  • 1/3 cup brown sugar or coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips

Instructions

  1. 1.Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. 2.Whisk the flour, protein powder, baking soda, and salt together in a bowl.
  3. 3.In a separate bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
  4. 4.Combine the wet and dry ingredients, stirring until just mixed, then fold in the chocolate chips.
  5. 5.Spread into the prepared pan and bake for 22-25 minutes, until the edges are golden and the center is just set.
  6. 6.Let cool completely in the pan before cutting into 9 squares.

Tip

Pull these from the oven when the center still looks slightly underdone — they firm up a lot as they cool, and baking until they look fully done in the oven usually means dry blondies once cooled.
