Bariatric-Friendly Protein Pudding

Ingredients
- •1 scoop (about 30g) vanilla protein powder
- •1 box (1 oz) sugar-free instant pudding mix, vanilla or chocolate
- •1 1/2 cups unsweetened almond milk or skim milk
- •1/4 tsp vanilla extract (optional)
Instructions
- 1.In a bowl, whisk the sugar-free pudding mix with the milk for about 2 minutes, until it starts to thicken.
- 2.Add the protein powder and vanilla extract, and whisk again until completely smooth with no clumps.
- 3.Divide into small portions (about 1/2 cup each) — this is meant to be eaten slowly in small amounts, not all at once.
- 4.Refrigerate for at least 1 hour before eating, until fully set.
Tip
Whisk the pudding mix into the milk before adding the protein powder — mixing protein powder into an already-thick pudding base is what causes the lumps.
