Ingredients
- •3 ripe bananas, mashed
- •2 eggs
- •1/3 cup melted coconut oil or butter
- •1/3 cup honey or maple syrup
- •1 1/2 cups flour or oat flour
- •2 scoops (about 40g) unflavored protein powder
- •1 tsp baking soda
- •1/2 tsp cinnamon
- •Pinch of salt
Instructions
- 1.Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
- 2.In a large bowl, whisk together the mashed bananas, eggs, melted oil, and honey.
- 3.In a separate bowl, whisk the flour, protein powder, baking soda, cinnamon, and salt together to break up any clumps.
- 4.Fold the dry ingredients into the wet ingredients until just combined — don't overmix.
- 5.Pour into the prepared loaf pan and bake for 45-55 minutes, until a toothpick comes out clean.
- 6.Let cool in the pan for 10 minutes, then turn out onto a rack to cool completely before slicing.
Tip
Whisk the protein powder into the dry ingredients first, not directly into the wet batter — that's what stops it from clumping into little dense pockets throughout the loaf.
